New beef cut from Mato Grosso becomes a sensation at barbecue festival.

MT Steak, a beef cut exclusive to Mato Grosso, was one of the highlights of the last weekend at Içara na Brasa, the largest barbecue festival in Santa Catarina, held in the municipality of Içara. A total of 115 kilos of MT Steak were served at the event, which featured high-quality gastronomy and live music.

Chosen through a contest held by the Mato Grosso Institute of Meat (Imac) in 2023, the MT Steak is taken from the shoulder and represents the quality and sustainability of Mato Grosso's meat.

Responsible for bringing MT Steak to Santa Catarina for the first time, chef Rubens Catarina highlighted the popular approval of the beef cut at the event. “Everyone is happy, everyone is enjoying it. It’s an incredible cut, which offers quality, the presence of a forequarter cut, the strength of the flavor, and people compare it to filet mignon, so the acceptance is huge,” he emphasized. “MT Steak has immense importance at our event. Imac brought an innovative cut to the South, further strengthening the barbecue tradition we have here. It’s a pleasure for us to have MT Steak, and I hope this partnership lasts for many years,” stated Eduardo Blissari, one of the organizers of Içara na Brasa.

Emilly de Sá, a chef from Criciúma (SC), also praised the MT Steak. “It surprised me with its tenderness; I found it better than a filet mignon. It has a flavor, a bit of fat that melts in your mouth. I thought it was sensational,” she emphasized. “The MT Steak represents much more than a new cut of beef; it symbolizes the identity of Mato Grosso's livestock farming and was born from the union of science, gastronomy, and a herd raised with socio-environmental responsibility. Participating in barbecue events throughout Brazil is fundamental for the visibility of our state's meat, which is at the forefront of quality meat production,” emphasized Paula Sodré Queiroz, executive director of Imac.
