Soybeans are a key ingredient in animal nutrition due to their high protein content and excellent amino acid profile. However, their use in raw form is not recommended, as they contain antinutritional factors—such as trypsin inhibitors, lectins, and phytic acid—that impair nutrient digestibility, reduce animal performance, and can cause metabolic changes.
The main objective of thermal processing of soybeans is to inactivate these antinutritional factors, improving protein digestibility and making the ingredient safe for use in animal feed. This process must be rigorously controlled, considering variables such as temperature, time, humidity, and pressure, to avoid both under-processing and overheating, which can cause nutritional losses due to the Maillard reaction.
Through proper processing, various byproducts are obtained, such as soybean meal, extruded whole soybeans, protein concentrate, and soybean oil, widely used in animal feed. To ensure processing quality, laboratory analyses such as urease activity, protein solubility, and trypsin inhibitors are fundamental. Quality processing ensures better nutrient utilization, improved zootechnical performance, and food safety.
